Avocado Fries

If you’re bored of artisanal coffee and smashed (lightly pressed with a fork) avocado on toast, then check out these avocado fries, because the only green thing that you want to smash is The Hulk.  Texturally these delights are like me after a week in the sun, crispy on the outside soft on the inside. Top with feta, salsa or pair with your favourite spicy dip.

Avocado Fries


Ingredients

  • 3 Avocados Ripe but firm
  • 200 ml Vegetable Oil For Frying
  • 2 Large Free Range Eggs
  • 100 g Plain Flour

Spiced Breadcrumb Mixture

  • 300 g Fresh Breadcrumbs (or Panko)
  • 1/2 tsp Sea Salt
  • 1/2 tsp Chilli Powder
  • 1/2 tsp Paprika
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Cumin

Instructions

  1. Heat your oil over a medium heat, until around 200 degrees centigrade.  While your oil is heating prepare three separate bowls: One with your breadcrumbs, one with your whisked eggs and the third with your flour.

  2. Halve, pit and peel your avocados. Slice each half into 4 chunky wedges.

  3. Working one at a time, cover your wedges in flour, then submerge in the egg, then your breadcrumb mixture. Transfer to a clean plate as you work.

  4. Working in batches, fry your avocado for around a minute each, turning halfway through until golden brown if they are not fully submerged. Transfer to some paper towels to drain excess oil and serve immediately.
