Carrot Orange & Ginger Soup
Perfect for rainy days like today and American Horror Story: Coven binge viewing, this spicy carrot, ginger, and orange soup would remind you a bit of Myrtle Snow; down it in one go and shout Balenciaga at the top of your lungs.
- 2 tbsp Olive Oil
- 600 g Carrots Chopped
- 1 Onion Chopped
- 2 Cloves Garlic Minced
- 1 Orange Zest and Juice
- 1 tbsp Ginger
- 1000 ml Chicken Stock Or Vegetable if Vegetarian
In a large saucepan, heat olive oil over medium heat and then add the carrots, onion, garlic, and ginger. Stir occasionally until the onions soften.
Stir in the stock, orange juice, and orange zest. Bring to a boil then reduce heat and simmer for 30 minutes.
Purée the soup using an immersion blender. Adjust your seasoning if needed then serve.
